Vinegar is used in a wide variety of recipes. Here are just a few:

Pasta with Balsamic Vinegar

16 ounces of cooked pasta
4 tablespoons extra-virgin olive oil
1 teaspoon black truffle oil
1 large leek
3 garlic cloves, sliced
½ pound of mushrooms
2 tablespoons balsamic vinegar
1 teaspoon salt

  1. Pour the olive oil into a sauté pan and heat over medium heat for about 30 seconds.
  2. Sauté the leeks for about 2 minutes until softened.
  3. Add the garlic and mushrooms and sauté, stirring frequently.
  4. Add the balsamic vinegar, stir well, and season with salt to taste.
  5. Pour sauce and mushrooms over cooked pasta, drizzle with black truffle oil and serve.

Barbeque Sauce with Cider Vinegar

1 cup black coffee
1 cup Worcestershire sauce
1 cup ketchup
½ cup cider vinegar
½ cup brown sugar
3 tablespoons chili powder
2 teaspoons salt
2 cups chopped onions
¼ cup chili peppers
4 cloves garlic

  1. Combine all ingredients in a saucepan and simmer 25 minutes.
  2. Puree in a blender or food processor, then use or store refrigerated.

Chicken with Malt Vinegar

4 skinless chicken legs and thighs
¾ cup malt vinegar
½ cup dry white wine
3 shallots
2 tablespoons basil
Ground pepper
½ teaspoon salt

  1. Combine everything but the chicken and simmer for 5 minutes and then cool.
  2. Pour the mixture over the chicken; cover and refrigerate overnight.
  3. Remove chicken from mixture.
  4. Broil the chicken for about 8 minutes, brushing with the mixture.
