Vinegar is used in a wide variety of recipes. Here are just a few:
Pasta with Balsamic Vinegar
16 ounces of cooked pasta
4 tablespoons extra-virgin olive oil
1 teaspoon black truffle oil
1 large leek
3 garlic cloves, sliced
½ pound of mushrooms
2 tablespoons balsamic vinegar
1 teaspoon salt
- Pour the olive oil into a sauté pan and
heat over medium heat for about 30 seconds.
- Sauté the leeks for about 2 minutes until
softened.
- Add the garlic and mushrooms and sauté,
stirring frequently.
- Add the balsamic vinegar, stir well, and season
with salt to taste.
- Pour sauce and mushrooms over cooked pasta, drizzle
with black truffle oil and serve.

Barbeque Sauce with Cider Vinegar
1 cup black coffee
1 cup Worcestershire sauce
1 cup ketchup
½ cup cider vinegar
½ cup brown sugar
3 tablespoons chili powder
2 teaspoons salt
2 cups chopped onions
¼ cup chili peppers
4 cloves garlic
- Combine all ingredients in a saucepan and simmer
25 minutes.
- Puree in a blender or food processor, then use
or store refrigerated.

Chicken with Malt Vinegar
4 skinless chicken legs and thighs
¾ cup malt vinegar
½ cup dry white wine
3 shallots
2 tablespoons basil
Ground pepper
½ teaspoon salt
- Combine everything but the chicken and simmer for
5 minutes and then cool.
- Pour the mixture over the chicken; cover and refrigerate
overnight.
- Remove chicken from mixture.
- Broil the chicken for about 8 minutes, brushing
with the mixture.
