Balsamic Vinegar

The original Balsamic vinegar is produced and bottled in Modena, Italy. It dates back all the way to Roman times when farmers boiled grape juice in order to preserve it for the winter. They used the preserve to make sauces and jams, but some of the preserve became sour and turned into a delicious sauce known as Balsamic vinegar.

Balsamic vinegar is made from the juice of Trebbiano grapes. The juice heated and aged in wooden barrels. Over time, the juice evaporates and concentrates in flavor. The result is balsamic vinegar which is brown in color and has a sweet and sour flavor. The longer the vinegar is aged, the more expensive it is. It can be priced as high as $200 an ounce.
