Vegetables

The vegetable group includes all vegetables either raw or cooked and 100% vegetable juice. Vegetables are split into 5 categories based on their nurtient content which include dark green vegetables, starchy vegetables, orange vegetables, dry beans and peas and other vegetables.

Dark green vegetables are broccli, kale, spinich, dark green lettuce and others

Orange vegetables are pumpkin, carrots, and sweetpotatoes

Starchy vegetables are potatoes, and corn

Beans and peas are lima beans, pinto beans, black beans, soy beans and split peas

Other vegetables: Tomatoes, asparagus, mushrooms, onions and zucchini

 

Servings:The ammount of servings of vegetables needed depends on sex, age, and activity level. The average serving need is about 2-3 cups. A cup of vegetables looks like about a fistfull.
Health benefits:Vegetables contin many nutrients that provide benefits for your body. Most vegetables are low in fat and calories and no vegetables contain cholesterol. Fiber can help lower blood cholesterol levels and helps with weight managment which reduces the risk of heart disease. Vegetables also provide nutrients such as potassium which helps maintain helthy blood pressure, vitamin A which helps keep eyes and skin healthy, vitamin E which helps prevent cell oxidation and vitamin c which helps keep gums and teeth helthy.
Eating vegetables:It is important to vary the kinds of vegetables you eat beacuse different kinds provide different health benefits. Learning which kinds of vegetables are you favroites in each category will help you to eat them more. Buying a mix of frozen, and fresh vegetables that are easy to make is a great way to guarentee you will eat them. Making recipies that include vegetables in various ways such as stirfry or spaghetti with bell peppers, mushrooms, zucchini and onions is a great way to make eating vegetables yummy.
Starchy Vs. Others: Starchy vegetables contain more calories and carbohydrates than other kinds of vegetables so limiting the ammount of starchy vegetables is important.
